Pickled cucumber and carrot is the best companion for any grilled meat. It is also served as condiment for Nasi Goreng (fried rice) in my beloved country, Indonesia.
Wanna give it a try for your BBQ party?
5 cucumbers, cleaned, halved,
seeded, cut into julienne
3 carrots, peeled, halved, cut into
julienne
Shallots as needed, peeled
Bird's eye chillies (red and green), as
needed, cleaned
3 tbsp cooking vinegar
3 tbsp granulated white sugar
1 ½ tbsp salt
3 tbsp warm water
How to:
Dissolve sugar and salt in vinegar,add wsrm water.
Stir until well combined.
Place cucumber, carrot, shallot and bird's eye chillies in a mason jar.
Pour into vinegar solution, stir and mix well.
Let it cool and close the lid.
Store in a fridge. Can be stored for 2 weeks.
